Fall is here. The time of family feasts is upon us. With Christmas just around the corner the meals where “weird” veggies make their appearances are coming up fast. I’m not going to lie; I love almost all vegetables. Brussel sprouts are one of my favorites along with turnips, parsnips and cabbage. All the smelly ones! What can I say they are delicious! Many people resist the goodness of these diamond in the rough treats. I think it’s mainly because they just don’t know how to cook them; or at least they don’t know how to make them fancy. Once you’ve had something all fancied up you will acquire a taste for it and then from that point on you won’t need anything extra to enjoy it. For now I’ll teach you how to make Brussel sprouts sing with the addition of, what else? Bacon!
- 1 bag of fresh Brussel sprouts, cleaned and halved
- 2 lemons
- 1/2 a pack bacon
Chop up your bacon with your handy kitchen scissors and start it frying in a large pot or pan. I always use a pot if it looks like it might be more than the pan can hold. Once the bacon is mostly cooked throw the Brussel sprouts in and stir to coat them with bacon grease. keep stirring and frying the Brussel sprouts until they turn bright green. Bright green means that they are nearly done. At this point squeeze the lemon over top to brighten up the colors stir to coat and test with a fork to see if they are as tender as you like them. Serve when they get to your favorite level of cooked.
Just remember that Brussel sprouts are bitter and that they will open up the rest of your taste buds. If you want that turkey and pumpkin pie to taste their best be sure to eat your Brussel sprouts first!
