I like to indulge in the best of both worlds. With everything when ever I can. Today I’m talking about baking though. I do enjoy making muffins from scratch they are actually pretty easy really just being a mix of anything liquid and flour. When my daughter was first born I started using muffin mixes. They are easy and filling which is important when you don’t get much time to stop and eat. I always opted for bran muffins for the traditional reasons. It takes a while for things to go back to normal after you’ve had a baby and bran is a pretty awesome thing while you’re waiting for that.
When I was little my grandma used to make banana, coconut, raisin cookies and so I have fond memories associated with those flavors. I will have those cookies up here soon too!
To make the most out of a muffin mix the secret really is adding to it. These muffins for me really were about fueling my body so I would add lots of walnuts because they really are just the best of all the nuts you can eat. They are loaded with omega fats and protein. for even more protein I always add an extra egg. I also love adding a few mashed ripe bananas to the mix. Raisins are another excellent addition for even more fiber but they are also a great source of iron.
Great Additions to a Muffin Mix
- Almond slices
- Coconut (unsweetened)
- Banana (ripe, mashed)
- Blue berries (frozen work too)
- Flax seeds
- 1 extra egg
- Chocolate chips
- Dried cranberries
- Diced apples
Any combination of these additions turn out great! You will end up with an energy boosting muffin that will keep you full for a long time. I did try a few things that really didn’t turn out too good as well and so below you’ll find a list of things to avoid.
Things to Avoid Adding
- Large frozen fruits like whole strawberries and blackberries. They take up too much room in muffin tins for the muffins to bake properly and they get moldy almost instantly. If you did want to use these I would recommend running them through the blender first.
- Fruit juice works great in cakes but in muffins it just made the muffins extra dense and unpleasant to eat.
- Too much fruit. This can cause them to be too moist and go moldy really fast.
