Lime and Blueberry Cupcakes

I think that the colors of blueberry and lime look so pretty together that I just had to try a cupcake. I used a lime cake and topped the cupcakes with blueberry frosting, a spoon of blueberry preserves in the middle and finished it off with a lime slice! This is a fresh and cheery combination!

Cupcakes:
  • 1 1/2 cups cake flour
  • 1 tsp baking powder
  • Pinch salt
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp lime juice
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs

Preheat the oven to 350°

Mix the butter, sugar and eggs until fluffy. Mix the rest of the wet and dry ingredients separately and then add to the mix alternating between wet and dry and finish with the dry. Pour the mix into a Ziploc bag and then pipe it into lined cupcake pans. Bake for 18-23 minutes.

Frosting:

  • 1 lb butter
  • 1 kg icing sugar
  • 2 Tbsp blueberry preserves
  • A few drops each of blue and red food coloring.
  • Cream

Mix butter and icing sugar together until fluffy and then add the other ingredients. If you wand to pipe with a star tip process the blueberry preserves through a blender first. Ice the cupcakes then top with a spoon of preserves and garnish with a lime slice. Enjoy!
