I call these peanut butter celebration cupcakes because they are everything I love about peanut butter treats all in one. Peanut butter cups, Reses’ pieces and peanut butter frosting complete with chocolate cake. It doesn’t get much better than that!
So I started with a basic chocolate cake. Feel free to use a boxed mix and add a few extras to it to make it taste even more delicious. For Ideas you can always read my blog lazy cakes to see what I usually do to make boxed mixes taste better.
If you’d like you can alway use my from scratch chocolate cake mix too.
- 2 cups white sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 1 cup boiling water
Start by preheating your oven to 350°. Mix dry ingredients and wet ingredients separately before adding the dry into the wet 1/3 at a time. Reserve the boiling water for the end and stir it in by hand. To make pouring the mix easier you can pour it into a Ziploc bag first and then use the bag to pipe the cupcakes out. Next bake for 18-23 mins for cupcakes! If you did want to make this into cake instead just add about 10-15 minutes to the baking time.
Peanut Butter Frosting:
- 1 lb butter
- 1kg icing sugar
- Peanut butter
I whipped my frosting together as I normally do. I mixed my butter and Icing sugar until light and fluffy and then I added in peanut butter one tablespoon at a time until I got the flavour and creaminess I was looking for. The frosting was unbelievably delicious. I would recommend everyone trying it this way at least once to see if they like it. If I had to guess an amount for the peanut butter I would say about 1 cup. I also used the whipped peanut butter, which is way better than regular peanut butter in my opinion. I think that any peanut butter would work just great.
