Chai Cupcakes!

I love this time of year! When fall comes I always start heading towards spiced treats! Chai tea is one of my favorites. This is a recipe that brings all of those Flavors that I love and combines them with one of my other loves: cupcakes!!Chai Cupcake!
If you are in a hurry and don’t want to make a from scratch cake you can start with a box cake mix. Don’t forget to read my blog entry Lazy Cakes! for tips on how to get from scratch flavors from a boxed cake. Simply follow the directions on the box and add 1/2 of the chai flavor mix.

1/2 cup butter
1 cup sugar
3 tsp vanilla extract
2 eggs
1/2 of the chai flavor mix (recipe below)
1 1/4 cups all-purpose flour
1/2 cup buttermilk
1/2 tsp baking soda
1/2 tsp apple cider vinegar

Flavor Mix
1 1/2 tsp ground cardamom
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp cloves
Pinch ground nutmeg
Pinch black pepper

1 cup butter
2 tsp vanilla extract
2 cups icing sugar
1/2 of the chai flavor mix
A splash of cream if needed

Baking instructions

Start by preheating your oven to 325°. Mix Cake together. Spoon batter into a Ziploc bag and cut off one corner. Use the bag to fill cupcakes about 3/4 full and bake 15-20 minutes or until a toothpick inserted comes out clean. The buttermilk and the vinegar in this recipe are important for leavening. The cake may go wrong if you try to substitute them. Vinegar is a common ingredient in certain cakes (it helps the baking soda) so don’t worry about the cake tasting like vinegar. It won’t. It will be delicious.
