Blondies!

Vanilla cake with chocolate icing! These are always one of my most popular sellers. Simply the best of both worlds. Plus chocolate frosting is the best!

Instructions
1 cup white sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk

Frosting

1 lb butter
1 kg icing sugar
1/2 cup cocoa powder
2 tsp Vanilla
For those of you who don’t have kilograms where you live I have found a one to two ratio of butter and sugar works the best. Or you can simply mix one standard size package of butter to one standard size package of icing sugar. If it becomes a little thick add a splash of cream until you achieve your desired consistency.

Directions for Baking
Preheat oven to 350°. Mix wet and dry ingredients separately and then 1 third at a time add the dry ingredients to the wet. Make sure the bowl you choose is large enough 😉 Pour mix into a large Ziploc and cut off one corner. Use the bag to pour the mix into cupcake pans evenly and with out all the mess. Bake 20 to 25 minutes. You can tell the cake is done when it springs back to the touch.
This is one cupcake that is perfect without any added garnishes!
