Summer Love Cupcakes!

These cupcakes turned out great! I was so happy with the whimsical look. I ordered the candy flowers, bugs and wrappers form Flour Confections. I was very happy with their products. It is really hard sometimes to find good places to order from inside of Canada.

Cake:

Start with your favorite from scratch chocolate cake or box mix. If you do want to use a box mix be sure to read my blog Lazy Cakes about making a box cake taste richer. I’ll include my basic chocolate cake recipe if you don’t have your own favorite.

Chocolate Cake

2 cups white sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water

Instructions:

Start by preheating your oven to 350°. Mix dry ingredients and wet ingredients separately before adding the dry into the wet 1/3 at a time. Reserve the boiling water for the end and stir it in by hand. Bake for 30 to 35 minutes. 18 – 25 for cupcakes.

Yellow cake:

2 cups cake flour

2 tsp baking powder
1/2 tsp salt
1/2 cup butter
1 cup sugar
3 large eggs
2 tsp vanilla

3/4 cup milk

Preheat oven to 350°. Mix dray and wet ingredients separately and add the dry to the wet 1/3 at a time. Pour mix into a Ziploc bag and cut off one corner. Pipe into cupcake liners and bake  20 to 25 minutes.

For a 9 x 13 pan – Baked at 350° for 30 to 38 minutes.

Decorate with Basic American Frosting tinted yellow with a 1M Wilton tip. Add sugar flowers and bugs and drop into fancy wrappers.
